A Scandinavian Tradition

Scandinavians have a lot of traditional baked foods. In general they look a lot like this one - light in color. That is because the staple ingredients of Scandinavian baking are flour, sugar, butter, eggs, and cream or milk. Usually the flavors are pretty low key... but delicious!

These Scandinavian Almond Cakes have all the staple ingredients, but flavor wise they deviate from the normal Nordic fare. That is because a good dose of almond extract is added to this buttery, sweet cake. To that list of adjectives let me add moist, tender, and smooth. Now that is an extra special treat!

This Christmas season I got tired of offering the same sweets I have offered to my customers for years. It was time to give my sweet, elderly friend from my home town a new treat to serve to her senior citizens group. Thus, Scandinavian Almond Cake was born. Dad gave me a little more practice at this new delicacy by ordering a few for telephone company board members.

During my baking, I came across a few wrinkles to be ironed out. With a few more tries I hope to have something new to add to my product menu. It's about time I visited my roots with a blah-colored product. Ya, sure, you betcha!
